After selling his high-tech company on Dragon’s Den, Paul was ready to mix it up a little and quickly became one of the city’s busiest bartenders. With an unwavering passion for the well-crafted cocktail, he came to realize his calling was in haute mixology and that Ottawa’s bourgeoning craft cocktail scene was just the place to do it. A quick stroll through the fresh fruit and vegetable stalls in the ByWard Market were always enough to get him thinking of his next creation to add to the menu, next garnish to make a drink flourish.
