On October 28, 2023, Marc de Passorio took the lead as Director of Food and Beverages at the Fairmont Château Laurier. Marc has over 25 years of upscale culinary experience and was previously Head Chef and Owner of three different restaurants and has two Michelin stars to his name. His latest plan to collaborate with Indigenous chefs is creating buzz in the local food landscape. Marc is set to bring a captivating taste of traditional Indigenous flavours to the forefront of Ottawa’s culinary scene.
Marc will partner with a variety of Indigenous chefs he has trained to craft creative banquet menus and add traditional touches to dishes at Fairmont Château Laurier. Marc’s commitment aims to contribute towards building Ottawa’s future reputation as a five-star Indigenous culinary destination.
